If the words all you can eat make you shudder, skip the buffet lines and make a reservation at Bouchon, Thomas Keller’s sunlit bustling brasserie. You won’t find a warming dish of spongy scrambled eggs here—you can order them as you like, and they come with potato croquettes and toasted brioche. You know it’s a classy joint because the eggs Benny is listed on the menu as oeufs Benedict, and it costs $21. If you like things on the sweet side, get the waffles: They’re made with sourdough batter and an absurdly rich vanilla bean butter. Those looking to branch out from brunch classics will find a lot to like in the fresh and smoked salmon rillettes.

PRO TIP: The pastries are excellent. Order a croissant and pain au chocolat to-go for later.
