GO HERE: to understand why young Euros love wine bars so much. Owner Camille Fourmont is the one-woman band behind this cult spot where you can try affordable glasses (and bottles) from small producers, or buy a magnum to take back to your hotel room. There’s no kitchen—and no cook—but Fourmont evokes big flavors from well-sourced charcuterie, cheeses, and her famous white beans. You’d never guess they’re from a jar.

ORDER THE: giant beans with chive blossoms and lemon zest; burrata; oysters; intense charcuterie (andouille with bacon?!). You need something to soak up all that wine, unless you’re heading to dinner after—and most are.

THE VIBE IS: super-relaxed and friendly, if teetering toward hectic on weekends. You might be squashed into a solo chair by the door, or you might have to crowd near the bar…the better to be near Fourmont.

PRACTICAL STUFF: Closed Sunday and Monday. Open 5 p.m. to 10 p.m. on Wednesday and Thursday; 11 a.m. 3 p.m. and 5 p.m. to 10 p.m. on Friday; Don't go with more than four people; chances are slim you’ll snag a table. Oh, and don’t make the mistake of asking Fourmont for “something funky.” That’ll just peg you as a vino-tourist.
