Everything about Joshua Skenes’ Hot 10–winning restaurant is food-baller, from the tailor-made tasting menu (priced based on ingredient costs, but starting at $398) to the $1 million kitchen, in which many of the ingredients are grilled or smoked, to the deep, deep bowl of caviar that lands alongside lard-glazed Parker House rolls. Dinner for two can run you $1,000, but judging from the techies filling the room (wearing jeans, of course; there is no dress code), that’s not making it any easier to get a table. And you know what? It’s worth eating lentils for a few months to be able to afford a meal here, as every course is a beautiful adventure—something you can only experience there in that moment. That’s what fine dining should be.

PRO TIP: If you can’t get a table, or can’t commit to the cost, you can sit in the bar for cocktails, Japanese whisky, and exquisite à la carte bites. There’s even a bit of a late-night scene.
