Sitka & Spruce chef Matt Dillon partnered with flower-grower/landscape architect Katherine Anderson to create this incredibly tasteful all-day restaurant and retail space. Come for a meal (the baked goods are particularly incredible), but stick around to browse the shelves, which are filled with linen aprons, iron-fired fermenting jars, and the most elegant modern ceramics. To fill them there are Anderson’s arresting flowers: fragrant heirloom varietals of garden roses and other blooms in muted tawny shades. Japanese flower tools, fine books, and hands-on classes will inspire you to step up your arranging game, too.

PRO TIP: Stock your hotel minibar with a wholesome breakfast of London Plane’s lush cultured yogurt and toasty house granola with cacao nibs.
