“Farm to taco” meets Georgetown chichi

Take a Chipotle-like concept (simple menu, counter service, minimalist environment, tacos), swap in vegetables for meat and homemade corn tortillas for mass-produced flour ones. The result is Chaia, a Georgetown-ified popular farmers’ market stand now in its first bricks-and-mortar location. The gluten-free, vegan-friendly menu is short and sweet: just five tacos to choose from, all topped with microgreens, naturally. Whatever you do, make sure the creamy kale and potato taco is in your order. And because you’re already living your best “healthy-ish” life, you probably want to drink a seasonal shrub as well.

PRO TIP: Sit upstairs if you can—the layout is a little awkward, but the sun shines in nicely. On the weekends, add scrambled or fried pasture-raised eggs to your tacos. Bonus: You can reserve upstairs from Sunday–Thursday, 3–8 p.m.

THE DETAILS: There are only 28 seats, so this really isn’t the kind of place to linger, especially during a lunch rush. A limited selection of beer and wine is available.
