The Almond-Oat Lace Cookie is more of a loose confederation of cookie constituents than a solid cookie state, but sometimes it's good to let things get a little anarchic--in the case of these cookies, the thin batter lets a maximum of surface area get exposed to heat, which results in maximum cookie caramelization. It's like you melted a Rolo over a pile of chopped up almonds and oats, except it looks a whole lot better (trust us).
And best of all, half of the unincorporated cookie zone is skim-coated in chocolate, giving you the freedom to choose, from bite to bite, what your freewheeling cookie experience will hold. Who needs structure when you've got Almond-Oat Lace?
