Prune Chef Gabrielle Hamilton's Food Politics Metaphor Involves One Little Madeleine

We love the usually outspoken, always thought-provoking chef Gabrielle Hamilton of New York City's Prune. We just had to get that out of the way. Yesterday, at a Feast Portland Whole Food Speaker Series hosted by Bon Appétit editor in chief Adam Rapoport, a conversation with Hamilton about the challenges and importance of eating local drifted into world of global food politics. Naturally, Hamilton had a few thoughts on the subject (though she doesn't "consider herself a part of the larger problem"). The chef talked about how much we expect food to solve these days, all through the lens of a small pastry, the madeleine:
