Chef Francois Payard said it best at Bon App's preview party for Vegas Uncork'd last night: "To succeed in Vegas, you have to go BIG." For a chef, he says that means putting four ("at least four") luxury steak cuts on the menu in portion sizes that would make a real 'Merican blush.

For Bon Appetit--who brought Sin City to NYC last night to spread the word about our annual Vegas food and wine festival--that means bringing in Cirque du Soleil performers, bejeweled showgirls from Caesars Palace (feather headdresses are the BEST), electronic violinists, and a roulette table and slot machines to STK restaurant in midtown.

The party set the tone for the sixth annual Uncork'd event on May 10-13, which is appropriately bigger than ever this year: 60 restaurants, 50 chefs, 30 sommeliers, and 30 events. New events include a Kings of Cabernet wine seminar with David Lynch; a paella lunch with Jose Andres; a food truck pow wow on the roof of the Bellagio with Jean-Georges Vongerichten, Julian Serrano, Todd English, and Michael Mina; and our first-ever off-the-strip event: a party bus cocktail crawl to hot spots downtown.

Tickets are on sale as of yesterday and range from $75-$295 depending on event.
