Tara Jensen doesn't have a book deal or a TV show or even a store. And that's all the more reason baking enthusiasts seek her out. The life of a Smoke Signals loaf begins on Tuesday mornings, when Jensen gently forms the dough. The naturally leavened loaves rest for most of the day and overnight. Jensen, an artist and avid journaler, uses a mix of flour from two local mills for her loaves. Jensen makes 50 loaves a week—and that’s it. As the loaves rest, Jensen ducks outside to begin to build the fire in the wood-fired oven, where the bread will bake the next day. The next day, the loaves are ready.
