The best tidbit, though, might come right at the end of the interview. Jean-Georges mentions Marion Cunningham's The Breakfast Book as his guiding light for the meal. He's been making Cunningham's pancakes for 22 years now, and with good reason:
"Pancakes changed my life in terms of breakfast. I mean, every other book is inspiring, of course, from the new ones to the old ones, but this one...I don't know how to eat breakfast without it!"
