  1. Heat oil in a large skillet over medium-high heat. Add ginger and garlic; stir until fragrant, about 30 seconds. Add bok choy and 1/4 cup water; immediately cover skillet. Cook, turning bok choy once, for 3 minutes. Stir in chili paste. Cook 1 minute longer, stirring occasionally; remove from heat and season with salt.
