Something about the height of summer dulls your senses. When you get into your car, hot from sitting in the sun, you can feel your brain slowing down. Blasting AC in the office or at the grocery store does the same: in the cold, you can't smell the tomatoes right, and all the cantaloupes feel equally ripe (or unripe).
It takes a lot to break through this midsummer fog. It takes acid and sugar and color and ice. It takes plums folded into a creamy semifreddo, and roasted strawberries in a tart buttermilk sorbet. It takes the bitter orange bite of Aperol and the dirt-sour of raspberries, bathed in vanilla ice cream, or the icy burn of ginger and watermelon, frozen in paleta form.
