Prosciutto wrapped around juicy cantaloupe slices--that classic Italian primo--does not a real brunch make. But you can give this innocuous appetizer a new life (and make it appropriate for a mid-morning meal) by adding it to another Italian staple: risotto. Yup! Sounds a little strange; but trust us, the salty prosciutto, creamy arborio rice, and sweet melon make a tasty threesome, especially with a hearty spoonful of mascarpone cheese and a hit of fresh chopped basil.
