This Golden Beet and Jicama Salad with Creme Fraiche isn't only meatless, it's practically heatless--beets sliced thin enough don't need even a dip in a warm bath to be perfectly prepared. The jicama crunches, the creme fraiche dollops, and the golden beets just sit there and glow. Well, no, they bring that soil-y beet sweetness to the mix, which is brought out to shine by a lemon-zesty vinaigrette on top. There might be more beautiful things that you could make today, but good luck finding them.
