Vegetarian dishes aren't always as inexpensive as I'd like them to be. I've nearly fainted in the produce aisle over the price of out-of-season bell peppers or a head of radicchio. With this Greek-inspired vegetable casserole, I wanted to build something delicious out of the most ordinary possible grocery store veggies: potatoes, onions, green beans, canned tomatoes, and zucchini. The one-pot dish is a great way to put all those things together in a no-fuss recipe. Cheese, in this case feta, goes a long way to punctuate the dish, but if you're avoiding all animal products, you could top it with some nicely salted roasted almonds instead.
