Okay, technically you're right. But this dish really is all the cooking you have to do; add a few leftovers to these parsnip fries and you've got a wholesome, filling dinner on the fly.

Got some collard greens from last night's dinner in the fridge? Heat 'em up, throw them on top of a plateful of these parsnips, and you've got a warm hearty sorta-salad for dinner. Or have a can of tuna in the pantry? Mix some of that into these guys along with some fresh arugula. The greens will wilt slightly, and, with a squeeze of lemon juice, the tuna (preferably packed in oil) will act as a dressing for the whole mess.

A mess, maybe, but a meal, definitely.
