Pasture butter is my new obsession. Made from the milk of grass-fed cows, it's in season during the spring and summer and has a distinctive flavor depending on where the cows have been grazing. Milk from grass-fed cows is higher in Omega 3 fatty acids than milk from conventionally-raised cows, and the amount of these fatty acids peaks in the summertime. You can buy pasture butter from artisanal dairies at farmer's markets across the country or you may be able to find it at your local supermarket. The organic dairy coop Organic Valley, best known for its milk, is now producing salted, cultured pasture butter from May through September (cultured butter has a slight tang--it's delicious slathered on fresh bread and excellent for baking). If your supermarket doesn't carry it, just ask. They should be able to order it.
