Chewy cookies, like these cardamom-scented ones, are great for ice cream sandwiches. If they're too crispy, the dessert will be hard to eat. The good thing about that? It gives you leeway. Make them tonight, store them in an airtight container at room temperature, and they'll keep until Friday or Saturday. That's right: It's only the cookie part you have to make. The ice cream comes from the grocery store.
