This is not the s'more you remember eating round the campfire as a kid. We upped the ante on the humble dessert sandwich by translating its key ingredients--silky chocolate, toasted graham cracker, and fluffy marshmallow--into a s'mores cheesecake fit for both a fancy dinner party and a quiet weeknight in.

Since making the three components of this dish takes some time, we recommend baking the buttery crust and chocolate cheesecake filling up to two days before serving. Then, you can whip up the billowy marshmallow topping in the morning, spread the sweet peaks on the cheesecake before you head out to work, and try not to get too distracted thinking about the sugarbomb (and fresh berries to top it off with) chilling in your fridge. Because when you get home, this delicious dessert will be waiting. --Doreen St. Felix
