Growing up on the Mississippi Gulf Coast,
nothing was sure to please the whole family like
a big pot of gumbo.
For me the key to a good pot of gumbo is getting
the freshest seafood I love including shrimp,
crab and crawfish.
But I also get creative using whatever fresh catch
of the day is available.

Andouille sausage and hearty vegetables.
And if you don't already have one,
an eight quart heavy bottom Dutch oven is
a great investment.
First thing we'll want to do is create our roux,
whisking equal parts oil and flour
on medium low heat until the mixture turns
from blond to a rich shade of light chocolate.
After browning the roux,
add the holy trinity of onions,
bell peppers and celery
then okra, spices, fish stock
and finally your fresh Andouille and seafood.
After about an hour or so of slow cooking,
these simple ingredients marry together
and transform into something delicious,
that's deep rooted in the history and culture
of the gulf coast.
Then it's time for the family to come and get it.
All that's left to do is make some fluffy white rice
and serve topped with fresh cut green onions.
Ask any Southerner and they'll tell you.
Most things are just better together.
