Dominique Ansel Reinvents the Rainbow Cake

So I'm doing a millefeuille.
Millefuille is French classic dessert.
You can also call it Napoleon.
I start off with some very flaky,
nicely caramelized puff pastry that I have right here.
So we trim off the edge, you can see all the
layers are very flaky and very crunchy.
We're going to cut small rectangles.
You can hear the dough is very flaky, nicely caramelized,
and super crunchy.
And we have five different fillings.
So right here we have some pastry cream.
The red is raspberry, the orange is clementine,
then we have lemon, the green is mint,
and the purple one is blueberry.
We're gonna add a layer of each of the pastry cream.
All right, I'm gonna make a new one.
And then cut them in half.
So now we have six pieces of the puff pastry.
This is the raspberry.
Then the orange one, the clementine.
Then the yellow, which is lemon.
Then we have the green, which is mint.
And the last one, the blueberry, the purple one.
Here we just finish it off with some
colored powdered sugar on top.
