Will and Julie Horowitz, the sibling duo behind NYC restaurants Ducks Eatery and Harry & Ida's Meat & Supply Co., talk about how their family traditions and the support of their team framed their sustainable approach to food.

I think one of the most important
and strongest inspirations for us
in opening this restaurant
has been the family legacy of being in the food industry.
[fast upbeat music] Together we own Ducks Eatery,
Harry & Ida's Meat and Supply Co
and Harry & Ida's Luncheonette.
Our great-grandparents actually
had two delicatesans.
We use a lot of the same ideas,
we are telling
the story of our family.
One of the thing's that sets us apart
is our ability to use all these weird
different parts of the animal or vegetable or fish.
Get people to try pig ears or goat neck
and if we can it's more sustainable.
The key is making sure that
these ingredients look beautiful
because that's what's gonna be
what people first see.
It's so important to be able to work
with your team.
Day to day I'm on the floor,
I'm engaging with customers,
with our staff.
We've had a team of dish washers,
prep cooks, bar tenders.
They have been our core day to day people
And those end up being those I trust most in my life.
Ducks is constantly progressing and so much of that
is based on where we're traveling
and exploring.
And so we have more information at the touch of a button.
Through technology we're able to connect
a farmer to a small restaurant
to a community around us.
And being close to the community has been
the thread work to our success here.
