Guitar String Chicken with Samin Nosrat

My name is Samin Nosrat.
I am a cook, I am always up for an adventure.
And that's a big reason I love cooking on the farm.
It's a hundred rocky acres that my friends
Sarah and Eric bought,
and I helped them very slowly restoring
and taking care of.
I always think about what are the static sort
of anchors in a menu that I can't change,
and for what I can't change at the farm is the kitchen.
I know I have to cook over fire,
so how do I make the most use
of all of the different sort of stages of a fire?
And I remember this story of how before I even began
to cook and I was hanging out with my friend Melissa,
and her dad, who is just this crazy wacky guy
had just watched some Food Network episode
where some chef had set up a jerry-rigged spit almost
in front of his home fireplace.
Since her dad didn't even have half
of the stuff that the guy on the show had used,
he totally just made it up as he went along
and threaded a chicken on a guitar string
and hung it from his golf club in front of the fire.
An hour and a half later,
the moistest, most tender chicken emerged.
So we sort of just called it Guitar String Chicken,
it was the funniest thing.
So I was like, maybe I'll make Guitar String
Chicken at the farm.
(laughing)
I always want to wow people with
an idea that sort of beauty of cooking
in that fire pit is that everyone's gathered around
with their drinks and everyone's watching
and everyone's sort of part of it,
and they're smelling the smoke
and they're seeing it,
and it's just this very sensual experience
for everyone, everyone gets to be involved.
And all of these different things we're doing all at once
to make a really beautiful multi-layered meal
and make it as delicious as we possibly can.
