Inside a Bakery That’s Making Gourmet Weed Brownies

I'm Rochelle with Bon Appetit,
and these are no ordinary cookies.
We're going to visit a farm and a bakery
to learn how cannabis makes it from a plant to a cookie.
Got into the industry
because I wanted to bring it up to the four star dining
that I wanted to have it at.
I never wanted to have just the brownie,
or just the cookie.
We make love bars, which are chocolate dipped
graham crackers that have homemade jam in them.
Coming from a French pastry background
I always did everything by scratch and all-natural.
There's no preservatives in my dough.
And so how does the cannabis actually
get into the products?
We infuse butter.
THC is fat soluble.
So it latches onto the fat in anything.
And we're left with this nice, beautiful, green butter.

Some of us have been known to eat a whole pan
of non-cannabis brownies.
Definitely don't do that with your products, right?
Like there's a limit to how much you can eat.
You don't want to eat a whole pan.
