The Most Badass Way to Cook Steak

Hi, I'm Lee Desrosiers.
I'm a chef at Achilles Heel in Greenpoint, Brooklyn.
Today I'm gonna show you
how to cook a steak directly on the coals fire.
(country rock music)
So if you want to cook a rib eye at home,
you're going to need a couple of props.
You'll need some fire gloves to maneuver the logs,
tongs, an insta-read thermometer,
and I have a custom made rack to rest the steaks on,
and at home you could use a resting rack
propped up on a couple of bricks.
So I positioned all the burning logs to the left here
so that I can have the access to these nice hot coals.
I'm gonna take the shovel.
Just gonna kind of pull them out a little bit.
That's gonna be our bed of coals,
right where we're gonna cook the steak.
Just gonna lay the steak right on top.
That's it.
I'm gonna let it sear on this side,
about three to five minutes, then flip it over,
and do the same thing.
In between, I'm also gonna fluff the coals a little bit.
You're gonna see that these coals
are gonna be all dark because they've cooled down
because the steak is sitting on top of it.
So, we have all the coals stuck to it.
You just kinda brush them off there.
Okay, so that's one side.
I'm just gonna shift everything,
because I want to get these fresh hot coals right here.

So at this point, we could also just start cooking
from the radiant heat.
It's not directly on the fire or underneath the coals,
it's just like, if you put your hand right where the meat is
you can feel the heat, and if you can hold it there
for about two seconds, that's a good amount.

Okay, so here's your finished rib eye.
There's some nice gristle, add that.
Just adds a lot of flavor to the meat.
It's where you get a lot of the flavor.
The beefy flavor is from the gristle.
Delicious steak.
