A grapefruit, you can use a vegetable peeler
to remove the skin as thin as possible away
with the least amount of pith.
And then, you will blanche this eventually.
Get it into a julienne.

Getting into a julienne.
You want to blanche it, of course.
You have it.
And then to remove
the pill.
You want a thin knife.
You want to cut it around.
You're removing that.

Technique like this.
To remove all of the white piece.
Then you want to cut in between the segment.

The second one.
The second one, you go nick through the membrane
and twist your knife.
Make it go there.

You can use the juice.
Usually you would mix with maybe some jam
and
around your segment.
This one is not too good.
And you can put
the julienne, some time you would want to blanche it,
in the center of it
for the garnish.
