Saffron Brittle

Today we're gonna be making a dessert based
Noorani desert known as sohan.
This is a saffron brittle with pistachios, almonds,
and thick sea salt.
So let's get started.
First, the cooking spray.
And then you're gonna dissolve an eighth teaspoon
of ground saffron, this is the good stuff.
Into two tablespoons of rose water.
You're gonna see, you immediately get that color.
Look at that.
We're gonna set that aside,
and then you're gonna sprinkle three quarters cup sugar,
half a cup of corn syrup, third of a cup of honey,
and two tablespoons water.
We're gonna give that a little stir.
And then, we're gonna bring the mixture to a boil.
So just start to bubble.
This happens really, really quickly,
so this is not time to walk away.
You're dealing with hot sugar,
be careful but don't be too nervous, have confidence.
We're at 230, so that's at the right stage.
Well, I do think it's thready.
We're gonna wait til it gets 290 degrees
and then we'll stir in a quarter cup of slivered almonds,
two tablespoons butter, a teaspoon of salt,
and once pretty much the butter is incorporated and melted,
we'll add everything else
cause it gets to 300 degrees pretty much immediately.
Look at that color.
We'll add a teaspoon of baking soda
and then the saffron water mixture.
That, then we'll top this with fresh pistachios,
crushed rose petals, I think it makes it look pretty.
Then some flaky sea salt for more added crunch.
You see how fast that happened?
And then over time set up.
Alright, don't touch it, let it do it's thing.
Til it's completely cool.
So I will not touch it until about 30 minutes.
Seriously, don't touch it, you're gonna burn yourself.
(cracking)
That's pretty sweet,
but because it has a good amount of salt,
it kind of balances it out.
You definitely taste the saffron, you taste the rose water.
You get the almonds, the pistachios, even a bergamot,
tea would be great with this, coffee would be fine too.
