You can pass over much of the 14-page menu at this catchall Chinese restaurant tucked away in one of the dark recesses of the casino at Caesars Palace. The move here is fresh hand-pulled noodles. Sit at the counter and watch the chefs stretching them to order—no small feat; it takes years to master this skill—before saucing them in fiery XO sauce. The modern dining room is a blinding bright white, and depending on the time of day, the volume can be deafening. Everything about Beijing Noodle No. 9—much like a busy street in Shanghai—is intense. Save the intimate dinner for another time, and hit up this spot when you need a break from the craps table.

PRO TIP: It’s a casual place, but this restaurant gets seriously busy. Make a reservation or be prepared to wait during prime dinner hours (luckily, the tables turn pretty quickly).
