Chef Michael Cimarusti opened Providence in 2005, and his seasonal tasting menus still feel new, exciting, and whimsical—like his take on “chips and dip”: wild-caught salmon skin and crème fraîche with salmon roe and chives. And in true Cali fashion, the under-the-sea vibe of this two-Michelin-star favorite is way more lax than most traditional fine dining restaurants (yes, those are barnacles hanging from the ceiling, and sure, you can wear jeans). But don’t be mistaken; unless you’re Ari Emanuel, this is a special-occasion spot, with menus starting at $115.

PRO TIP: It’s known for seafood, but if someone doesn’t do fish, don’t fret—they also offer meat.

THE DETAILS: If you need to cancel your res, do so at least 48 hours in advance; a last-minute change will cost you $100 per person.
