GO HERE: for mixology, Mexican-style. Baltra is an intimate cocktail bar from the owners of La Licorería Limantour, a bar that kick-started the mixology craze in the city. This one has a curious Darwin/Galápagos theme and a less-is-more approach to its perfectly balanced drinks.

ORDER THE: Akia (tequila, Lillet, and white crème de cacao), Goldfinch (sherry, Becherovka, and pineapple-cinammon syrup), or Fragata (Dubonnet, whisky, and red-fruit shrub).

THE VIBE IS: cozy and friendly, decorated like the living room of your most well-traveled friend.

PRACTICAL STUFF: Opens at 6 p.m., Monday to Saturday. Closes at midnight on Monday and Tuesday, 1 a.m. on Wednesday, and 2 a.m. from Thursday to Saturday. Closed Sunday. Reservations are taken, but half the tables are always kept for walk-ins.
