You're going to be hearing a lot about the restaurant whose name means "Mother Earth" in old Finnish. The dinner my wife and I had at Maaemo in Oslo, Norway, was easily one of the most memorable meals of my life. The langoustine over spruce (above) had a lot to do with it, as did the other 25 courses featuring local flora and fauna. Some meals comfort; others push the boundaries of the culinary arts in new and exciting directions. Maaemo did both--a rare achievement. So was it worth every mind-boggling, bar-raising cent? You bet. --Andrew Knowlton
