Pesto is a trusty kitchen staple. It takes only minutes to whiz up (if you don't have some in the refrigerator already), and can transform the most ordinary of dishes into something pretty darn fantastic (pesto mashed potatoes, anyone?). Traditional versions are made with basil and pine nuts, but other combinations of herbs and nuts yield some very tasty results. Give it a shot with our June cover recipe--with fresh parsley and roasted almonds, this bright and rich pesto is a new one to add to your arsenal.
