Kachka offers a variety of flavored vodkas, including this smoky collaboration with the chefs at Ox in Portland. For a floral take, replace the charred rosemary with ¼ cup loose dried chamomile (or 8 tea bags).

Preparation

  1. Step 1

    Char rosemary sprig in a dry skillet over medium-high heat, turning occasionally, until blackened in spots and fragrant, about 4 minutes. Place in a 1-qt. glass jar and pour in vodka (reserve bottle). Let sit at room temperature 24 hours. Taste it—you should be able to detect the flavor; if not, let infuse longer.

    Step 2

    Strain into reserved bottle and freeze at least 4 hours before serving.
