You know it's officially fall when leaves start turning coquelicot, gamboge, and other colors I looked up on Wikipedia; a new version of Law & Order premieres on television; and, best of all, farmers' market vendors sell paper cups of delicious chest-warming hot apple cider.

If you asked one of these vendors--say Jake Samascott (pictured) of Samascott Orchards of Kinderhook, New York--what exactly apple cider is, he'll tell you that it's simply raw pressed apples with no added water or preservatives. Apple juice, says Samascott, is often processed or filtered, and can have added sugar or water. In this country, though, some companies label apple cider and apple juice interchangeably. Either product adds autumnal depth to both sweet and savory dishes. Here are 10 unexpected uses for the classic autumnal refreshment:
