Pastry chef and food blogger Stella Parks has a great way to deal with those leftover bottles of Champagne sitting around your house that you couldn't even imagine smelling, let alone drinking<meta charset="utf-8"></meta>--turn them into marshmallows!
We're not saying you should make these with vintage Dom, but they seem like a great winding-down-from-the-holidays kind of experiment, and pretty easy to make, too. Parks, who's made these Champagne marshmallows a winter tradition, suggests that "dry Champagnes give the 'mallows a bit of a toasty flavor, whereas sweeter Champagnes tend toward tartness in the final candy."
