By the looks of it, this soup would make a perfect Easter pea soup appetizer. But no, the green actually comes from Swiss chard blitzed with heaps of parsley, cilantro, and mint. Then the garnishes: the sharpness of feta and the brightness of lemon juice take this hearty winter soup in a bold direction.
