Although it's named after a noble Roman family, fiorentini isn't above a hearty vegetarian ragu. Quite the opposite: the pasta's squiggly ridged shape takes hold of the toothsome, barely cooked butternut squash, earthy parmesan, and ribbons of fresh sage. It's a refreshing change from the standard ziti or penne, and with only seven (seven!) ingredients in the whole dish, it's a no-brainer dinner to ease into the work week--whether you're a commoner or a king.
