Welcome to Meatless Monday, a column in which we feature vegetarian recipes to help offset the weekend's carnivorous sins.
In just a few more days, you're going to be subjected to the traditional monstrosity known as the green-bean casserole. (We are not a fan.) But there's one way to avoid it, and to enjoy green beans as they're meant to be--tender, succulent, untouched by gloppy cream and french-fried onions. An hour-long oven roast lends these beans flavor and texture that crushes the competition of their boiled, steamed, or casseroled counterparts. We love these so much we'd make a meal out of them. Just add an egg and some toast and boom: Monday supper. --Rachel Stearns
