Your cocktail party guests are all dressed up. But hey, so are your mushrooms! Consider creme fraiche and shallots the high heels and furs of this dish. Add polenta and Comte cheese and then do some primping yourself. You'll have time--you can make the ragout a day ahead. --Christine Busciglio
