Black beans and rice make for a comforting, protein-packed meal, but the flavor tends to need brightening. This version is hopped up on apples, cilantro, red onion, and cumin seeds. Add shredded pieces from that rotisserie chicken you picked up on the way home, and you've got 1. a quick meal for tonight and 2. leftovers you can stretch through the weekend. (Think chicken soup for those winter colds and huevos rancheros for breakfast.)
