This recipe calls for Parmesan cheese, but listen. You could also use Pecorino, or feta. We are not going to stop you. As long as it's a little salty and has some bite, you're in the clear. The important thing here, really, is that you put some cheese and black pepper in a yogurt dip, and that you eat it with fresh, steamed artichokes. Really, you can't go wrong.
