1/6Pimentón Roast Chickens with Crispy Potatoes
"I like to keep things simple when I entertain, serving dishes that keep me seated with my friends," says David Tanis. "For example, it would be a shame not to present these ruddy, fragrant birds whole. It's easy--and theatrical--to carve them right on the platter at the table." Tanis uses a pair of poultry shears to do the job, cutting out the backbone on either side, then snipping through the breastbone lengthwise to divide the bird into two pieces. Finally, he cuts off the legs and wings and lets guests loose. ("The backbone is the piece to fight over," he notes.) Pair with: Mount Eden Edna Valley "Wolff Vineyard" Chardonnay 2009, $20

Cooking lamb shanks uncovered in their broth simultaneously browns and braises them, adding richness and color. Braise them a day ahead; the flavor will deepen overnight in the fridge. "A big pan of lasagna is always a good way to feed a crowd, since it can be prepared in advance and only needs a pop in the oven to finish," says Tanis.
