I used to travel to Paris twice a year for work. I'd dream about dredging crisp frites through puddles of bearnaise, about cutting into beefy entrecote. And yet, by Day 5, I'd be done. Defeated. Pleading for a plate of stir-fried vegetables, or a salad that wasn't topped with an egg and lardons.

We're not built for French food—at least not day after day, breakfast, lunch, and dinner. We're Americans, which means we're used to eating pan-Asian one meal, Mexican the next.
