Whether you’re slicing apples for a galette or potatoes for a gratin, perfectly thin, uniform slices make any dish a showstopper. Inspired by Hot 10 honoree Semilla in Brooklyn, we tried it on carrots.

  1. Peel vegetable, trim ends, and cut lengthwise along one side to remove a thin slice, creating a flat surface.

  1. Lay vegetable on flat side and cut three more slices to square off remaining sides (a cross section should reveal a square).

  1. Without cutting all the way through, cut crosswise into as-thin-as-possible slices. Press slices at an angle to fan them out.
