How to Make an Egg in a Basket a.k.a. Toad in a Hole a.k.a. Hen in a Nest
No matter what you call it, an egg in a basket is one of our favorite ways to make fried eggs feel extra special. Here's our technique for a golden-brown and picture-perfect one.
Alex Lau1/10We're particularly partial to sturdy white sandwich bread, but anything with a surface area big enough to punch out that hole will do. Look for an unsliced loaf and slice it yourself about 3/4" thick.
Alex Lau2/10Use a sharp-edged cookie cutter to punch out a 2–3" hole from the center. Stars and hearts work too, but avoid cutters with an intricate edge.
Alex Lau3/10Melt a bit of butter, about a tablespoon, over medium heat until foam subsides. Use a non-stick skillet. It just makes life easier.
Alex Lau4/10Add the toast in a nonstick skillet. Don't forget the hole! It's perfect for sopping up a runny yolk.
Alex Lau5/10Cook until the underside of toast is golden brown and the egg is set on the bottom (you'll see the white turn opaque down there), about 1–2 minutes.
Alex Lau6/10Season with salt and pepper. Flip the hole if it begins to brown too aggressively.
Alex Lau7/10Add another tablespoon of butter to help brown the other side.
Alex Lau8/10Use a wide flat spatula (we like a fish spatula) to flip the toast quickly and confidently to avoid an egg escape.
Alex Lau9/10Cook until bread is golden brown and egg white is just set, another minute or so.
