Breakfast: Quinoatmeal with Apple and Toasted Walnuts (serves 1)
Lunch: Leftover Confetti Lentils + 3 cups arugula or other salad greens + smoked salmon + 2 Tbsp. Whole Grain Mustard Dressing
Snack: Apple with Almond Butter (serves 1)
1 small apple, sliced
1–2 Tbsp. almond butter
Dinner: Brussels Sprouts and Tofu Stir-Fry (serves 4)
Side: Black Rice with Coconut (serves 4)
Dessert: Spicy Orange Hazelnut Chocolate Bark (serves 8)
