We know Passover is still more than a month away, but these Smoked Fish Fritters with Beet Vinaigrette (an update on the occasionally less-than-appetizing gefilte fish) make for a great appetizer any day of the year, High Holy or otherwise. The combination of smoked and fresh fish with shallots and chives makes for a light, tangy patty that's great on its own, but that gets even better after a dip in the horseradishy beet vinaigrette.

And if you do want to bust these out on Pesach itself, the recipe is totally kosher--we used a crushed-up piece of matzo to give these fritters some structure, so even the most avid hunter of chametz would come up empty-handed.
