We are not sure we understand the point of Potato, Prosciutto, and Matzo Balls (pictured above). Yes, that's right: prosciutto. Because if you don't keep Kosher, let alone attempt the no-bread-for-Passover rule, what is the point of ruining a perfectly good fried snack by mixing in crushed up cardboard?

Still, as Passover approaches, the Internet is full of home cooks and bakers strutting their matzo-bilities. And you know, we love us some Kookery. Here are eight recipes from bloggers so creative--from a tiramisu (or more aptly named "tiramatzah") to a lasagna--that we're almost tempted to give their creations a go.
