Puff Pastry Baked Brie Bites

Oh hello, I didn't see you there.
Welcome to my kitchen.
I'm Brad Goreski and I'm hosting an intimate dinner
for some of my favorite friends tonight.
And I thought that I would diversify my portfolio
a little bit.
So I've partnered with Pepperidge Farm Puff Pastry,
and I'm going to up the ante.
Let's take things to the next level for this one.
My new BFF Shilpa is gonna come by to help me.
Hi Brad.
I'm so happy you're here.
I hear you're in need of some inspiration today.
I was thinking of trying out puff pastry,
but I'm a little bit anxious
about trying something new and serving it
to my best friends.
Everybody feels a little anxious
when you're trying something new for the first time.
But the good thing is puff pastry is so reliable
and they're super easy to find in the freezer aisle
of almost any grocery store.
It's something that I usually turn to as well,
and I often use in my baking
because it's always a showstopper no matter what you do.
I'm all about showstopping
so let's get to it.
Let's get to it.
Today I'm going to show you
how to make Pepperidge Farm Puff Pastry Baked Brie Bites.
Ooh.
Really a crowd pleaser.
It has cheese, nuts, a little bit of fake jam,
so it's like sweet, savory.
It's crunchy and crispy from the pastry.
My mouth's already watering.
So here's the thing about puff pastry.
When you're working with it,
the important thing is to make sure
that it's properly thawed,
just transfer the box from the freezer to the fridge,
and then it thaws out gently overnight.
We're gonna portion this square into 16 squares.
Okay. And then we're gonna press
them into our muffin cups.
Gently squish it in.
There we go.
Oh, yours is actually perfect.
You got the little, you know what,
now I feel embarrassed about mine.
This is super easy.
For me, when I'm baking,
once something starts becoming fussy,
Brad starts checking out.
Yeah, no, I get that.
Just FYI.
Now that we have the pastry in,
what we're going to do is I have some cubed brie cheese.
Yum.
We are just gonna drop a cube into each little well.
Now that we have that in there, the cheese,
and we're going top it with fig jam,
and that's where this little sweet, savory magic happens.
Next step that we are going
to do is top this off with some chopped pecans.
Do we leave these open or do we fold them and close them?
Oh no, these ones we're gonna leave open.
Okay. Because you want them
to like pop up when they're in the oven.
We're going to bake them for about 15 to 20 minutes.
Okay. Or until they're
like golden brown.
I love puff pastry because I think it's so versatile,
whether they're sweet or savory.
You can make so many things, appetizers,
like I've made main course, I've made desserts all
with puff pastry as a base, and it's always very impressive
because of the layers.
[oven dinging]
I think our brie bites are ready.
And I'm going to patiently wait five minutes
so that I can taste one.
They look good, right?
While we're waiting for a cooling time.
We're going to put some actual thyme on there.
I have the cutest dish to display these on.
They're cool enough that we can lift them off.
Ooh, look how pretty they are.
Cute.

I think it's time to set the tablescape.
