Every year, I make this beautiful pumpkin pie,
but once it starts to cool, it gets
a big crack down the middle.
Dawn, what can I do to make the perfect pumpkin pie?
Eli, if your pumpkin pie's cracking,
it probably means you're over-baking your custard.
This can happen at a few different stages.
You wanna make sure your crust
is completely cooled after you've blind-baked it.
That's gonna prevent any over-baking around
the edges of the crust.

A pumpkin pie is really just a simple custard.
All I did was whisk together these ingredients
and I'm ready to fill my crust.
That's perfect.
Use an oven thermometer to make sure
your oven doesn't get too hot.
This one's right at 350, that's just where we want it.
Okay, so I've pulled the pie and the custard is set,
but it still jiggles a little bit when I shake it.
Now, let it cool completely.
And I mean completely.
